What would be the damage from a deity's symbol on the leans of a spotlight on a demon? Or should we just use the vampire stats?

Demons in general don't take damage from holy symbols as far as I'm aware?

unless you're using the random monster tables from the RMB, none, they don't care. if you are and it comes up there it'll be listed.
