It sounds like an enraged demigod or demon more than a human immortal. I would write it up as a godling.

What would you see the character as being like? What could I look to make the character better? Would it being based on Native American Mythology help? He read the forty ancient scrolls that containing info on alien visiting Earth, which are now being housed in the “Hall of Records” with an entrance to be found between the paws of the Great Sphinx.
The bat wings and horns really push it beyond what most Native American gods are like. Maybe you can say it is Aztec or ancient Sumerian. The Giza thing implies an Egyptian tie-in, but it still works. Gods can typically shape-change.

That is very much better and you can tie it more easily into Egyptian mythology that way. I believe Sobek was the crocodile god.

Gods were not always limited by region, either. You can always be vague on the details of the origin.

What is the number of Immortal types?

Can people come up with ther own way to kill them?
Like cuting off ther head?

Are we talking about human immortals or just Immortals in general?

I'd think that human(oid) immortals would be more common than other types, because it's much easier for them to blend in. Other types in large numbers could very well be godlings and demigods, as well as vampires, because these types have a good chance of passing as humans, or can change their shapes to appear as humans. Other immortals with permanent non-human features might be more scarce due to not being able to blend in so easily.

As for means to kill them, you can perfectly well come up with your own ways of killing them, if you want them to be killable in a way not available in the books. Cutting their head (or other significant part) off doesn't need to be the only way.
