Does anyone know of a highly customizable classes, specifically something like the Auto-G?

Well, there's Godling and Demi-God, which let you pick a few from a wide selection of options. The Super-Spy from Rifts: Mercenaries can also pick one from a selection of power.

Since some RCC can select an OCC that would be one way to acquire "specials".
While not an OCC in of itself, one could be subject to genetic modification (Gene Splicers for example) or other augmentation (Bio-Wizard, tech implants in SB3 or WB12).

What do you mean by specials and what would be combined. The Super spy OCC lets you choose between magic, psi, or option for exotic race/super power with gm approval.
The SF has several MOS options as does the mercenary class.

The Clones are coming you shall all be replaced, but who is to say you have not been replaced already.
