Maybe the unofficial founding of Chi-town? When settlers first came and reestablished civilization there and had a harvest party.
Though the CS government probably censors the role d-bees played in it's establishment, as well as the role magic users had in providing during the winter.

I can think of a few holidays the CS would celebrate:
Unification Day (celebration of the founding of the Coalition)
Founding Day (celebration of the founding of Chi-town; likely a local equivalent for different states)
Day of Remembrance (analogous to the US Memorial Day... remembering those who died for the Coalition)
Emperor's Birthday (a holiday celebrating everyone's favorite despot)
Armed Services Day (analogous to US Veteran's Day; thanking those who have or are currently serving).
Thanksgiving (likely commemorating the aftermath of some great battle or calamity, that has morphed into a general 'ain't it great to be a CS State' holiday)
That's six, giving you one every two months.
