Depends. If you are talking about a reality stand point of reach and other various physical mechanics than just go with Mark Halls video. Have a dwarf with a pole-arm.

However, from a pure fantasy game play perspective just go with whatever you want or go cliché (axe or hammer).

I personally would see a large shield and heavy helmet as an excellent defense for most dwarves. Use any good one handed weapon (probably axe).

I didn't watch the whole video, but one thing to keep in mind is that dwarves are tunnel-dwellers and miners.
Tunnel fighting might be different than outdoor fighting.
