PF2 RPG Main book
one of the geographic area you are going to play in
then
PF: monsters and animals

Each setting (except the Three Galaxy setting) has it's own 'core book' which is called a 'main book'
In one of the forums (IN thing the Q&A forum) there is a list of commonly used abbreviations.

Dice and a few friends to play with. The PFRPG is ready to play off the shelf in my opinion. A published adventure can be helpful if you've no idea how to put together your own, but it's not necessary.

+1

and add monsters and animals to my list as well for the stats for the standard animals (horses for example)

with those you have a decent cross section that gives you a lot of info about the world.
but just the main book and a homemade adventure works as well.

Thanks for all the great advice. Any "online"/email adventure groups going on for those not near a gaming group? Or.......any ways or modifications that make solo play a possibility?

The primary and most important books I use regularly are.

Palladium Fantasy Main Core Rule Book
Monsters and Animals
Dragons and Gods

After those three which will give you more than enough to have a good level of starting material. I would go with the following two world books Adventures on the Highseas and The Western Empire.

After that I would just get any source book for the area that you want to campaign from. The best in my opinion are Wolfen Empire, Eastern Territories, Northern Hinterlands and Land of the Damned.

This is pretty much my opinion... PFRPG, MA, and DG will give you a lot of tools to work with. Western Empire and Eastern Territories are, IMO, the most standard of settings, and a good place to start.
