Most spells can be only be interrupted if they take more than one action to cast anyway (or they planned to cast even single action spell, but decided an incoming attack was too dangerous and spent the action dodging instead). I thought about all of that, but there is obviously some balance smoothing that is needed or they did when they wrote it. Create in the title seems to be almost ALL ritual spells, for the most part. I've actually left out a few spells that still have the word create in them (that i meant to have in)...
